Salad with coffee vinaigrette, espresso and thyme ribbon noodles, a jellied coffee and beef bouillon and ossobuco in a spiced coffee sauce? What may seem unusual at first glance actually means new recipe creations that produce aromatic, finely balanced flavour experiences. Coffee powder or espresso is not used as we usually know it, prepared as a drink or as an ingredient in desserts or cakes. The bitter beans themselves are used to provide flavour when cooking with coffee. Their incredible variety of different aromas – there are said to be between 800 and 1,200 of them – is initially created by the art of roasting. Sometimes there might be peppery, smoky, chocolatey, herby or nutty notes, at other times there could be hints of vanilla, clove or caramel to provide a very special kick to your dish.
